At UNE Online, the Applied Nutrition graduate program got the summer started as an exhibitor at Nutrition 2018 hosted by the American Society of Nutrition (ASN). UNE Online was joined by 48 other booth exhibitors to welcome over 3,000 guests to share the latest research, science, and technology in nutrition science. What were the highlights? What is Nutrition 2018? American Society of Nutrition decided to offer a conference exclusively for nutrition science. Hoping to provide a space where the best in science and health meet. Prior to this, ASN hosted an annual meeting around Experimental Biology. With input from more than 1,000 ASN members, Nutrition 2018 was approved and created. Dr. Dodge is the Program Manager for the Master of Science in Applied Nutrition program at UNE Online. Her program has a diverse student body, and her faculty all follow the scholar-practitioner model, making the program highly desirable for students with a passion for nutrition. Recently we sat down with Dr. Dodge to discuss the Applied Nutrition program here at UNE Online. Can you tell me a little bit about your background and what drew you to UNE Online? I did my Bachelor’s, Master’s, and Ph.D. in Nutrition, all at the University of Maine. My dissertation, Evaluation of the Impacts of a Cooperative Extension 4-H Nutrition Education and Gardening Program on Nutrition Behavior and Self-Efficacy, involved developing a nutrition education curriculum and then evaluating the impacts of the curriculum on a variety of research groups. Reflections of an Online Student: My First Grad Course

For a while now I have known that {for me} going back to school was absolutely necessary. It took some time to get to the point where I was comfortable pulling the trigger and picking a program. It also took a lot of soul searching. I looked at topics everywhere from Psychology/Counseling to an MBA. Nothing really seemed to fit. That is until my love for health and nutrition seeped into my work life. From scratch, I started our company’s first step challenge. We did a trial run in our office and it really took off. There were “walking meetings” and “walking lunch breaks” taking place. All so their team could achieve the most steps and so that they had an excuse to get up from their desks! Joanna Rosebush, PhD, RD, LD

Joanna Rosebush Ph.D., RD, LD is a faculty member at UNE Online. She earned her Master of Science in Food Science and Human Nutrition, and her Ph.D. in Food and Nutrition Sciences with a special skill requirement in physiology. She is a Registered, Licensed Dietitian and has been an active member of the Academy of Nutrition and Dietetics since 1995. Dr. Rosebush recently developed the course APN 615 Nutrition and Metabolism at UNE Online in the Applied Nutrition Master’s program. Her extensive experience in clinical nutrition makes her a perfect fit for this class, which was built to examine advanced concepts of human metabolism of carbohydrates, protein, fats, vitamins, minerals, and water as well as the biological and physiological actions of these nutrients. UNE Applied Nutrition faculty member Micaela Karlsen is a doctoral fellow in Nutritional Epidemiology at the Tufts Friedman School of Nutrition Science and Policy and holds a Master of Science and Public Health from the Johns Hopkins Bloomberg School of Public Health. She is a nationally-recognized speaker in the field of nutrition and currently serves on two boards – the Expert & Medical Advisory Board for the International Plant-Based Nutrition Healthcare Conference and the Board of Directors for Plant-based Prevention of Disease (P-POD). She founded and maintains PlantBasedResearch.org, an online database of peer-reviewed, scientific research and other resources relevant to plant-based nutrition, as well as Sustainable Diet, a comprehensive support program for plant-based eating. Jackson Long, Student in the Master of Science in Applied Nutrition program

Jackson Long, a Master of Science in Applied Nutrition student from Boulder, Colorado, is passionate about plant-based eating and living a healthy lifestyle. Jackson’s interest in nutrition was piqued during his time as a competitive cyclist, as he sought out the optimal diet for his athletic performance. His initial interest in nutrition gradually grew into a passion for helping others on their own health journeys, which ultimately led him to UNE. From Competitive Cycling to Nutrition Growing up in Sun Valley, Idaho, Jackson participated in and loved outdoor sports from a young age.
