They will apply such frameworks by forming personalized courses of action. This course develops reflective practices that assist participants in exploring both professional and personal growth that has occurred throughout the University of New England’s MSEd program. This course provides a foundation of the legal underpinnings of the American education system and explores how legal decisions have had an effect on an educational system that covers lifelong learning. Participants will analyze case studies to apply their understanding and create a compendium of the laws unique to the states in which they work.

This course will focus on the leadership skills that the professional will need as a Reading Specialist/Literacy Coach. Specifically, this course will explore the coaching relationship and how to work collaboratively to plan, implement, and supervise literacy programs at the individual, classroom, school, and district-wide level. Within the course, educators analyze differentiation theories and incorporate differentiation strategies into the design of units and lessons in their own educational settings. This course centers on the principles of diversity, inclusion, and social justice. Participants will create a framework for diversity and inclusion through engagement with the literature and theories on social identity in the historic context of America. Emphasis is given to the theory behind the practice as well as different methods and hands-on applications. Federal and state laws, regulations, and judicial decisions relating to the education of students with special needs in inclusion classrooms are analyzed. Key legal provisions, such as free appropriate public education, least restrictive environment, and due process are examined. This course examines the application of management principles to foodservice operations and nutrition services including leadership, finance, quality control, human resources, negotiation, factors affecting foodservice design and equipment selection, and disaster preparedness. Students will apply the scientific principles underlying food preparation as well as studies of food selection, preparation and composition including evaluation of prepared products and recipe modifications. In addition, students will evaluate various food preparation methods, food presentation and food sanitation in practice.

This course provides students with an overview of food, food selection, and food service. Students will evaluate the criteria from which people select foods and how that relates to food production and service. Students will examine the nutrients provided from food; their impact on health; and steps to regulate certain nutrients with recipe modification without sacrificing flavor, texture, color, etc. Students will identify steps to ensure food safety; learn techniques in the preservation of nutrients and quality in selection, production, and storage of foods; and examine the role of government agencies in ensuring food security, safety, and quality.

The impacts and effects of culture, environment, economy, and mental and physical health on nutrition status across the life cycle are explored. Topics include sampling, experimentation, numerical and graphical descriptive statistics, confidence intervals, and hypotheses testing. Most public health programs and initiatives are funded by grants. How do you ensure that your grant proposal stands out from the competition? In this course, students have the opportunity to focus on the grant writing process as designed and directed by a federal or state public health funding agency. Particular emphasis will be placed on identifying and applying the requisite skills to have a potential public health program funded. Students learn about Requests for Proposals (RFPs), and how to write a grant proposal that adheres to the guidelines provided. This course will feature hands-on assignments based on actual grant components including a statement of need, goals and objectives, scope of services, partnerships and collaborations, and a program budget.

Effective interventions begin with a comprehensive understanding of the community’s health status. Students will learn to analyze and integrate data into the assessment process, with a focus on prioritizing health needs and adopting systems-thinking approaches. Geographic Information Systems (GIS) will be employed to analyze and visualize spatial patterns in health data, facilitating the integration of population, health, and environmental datasets with state and county shapefiles to generate informative GIS maps. Communities usually have preparedness protocols for emergencies like hurricanes, tornados, and earthquakes, but what do communities, states, or even the federal government have for pandemics? This course will look at the history of pandemics, populations most affected by them, effective response systems, evidence-based strategies to detect and prevent outbreaks, and communications mechanisms that ensure timely information sharing.

By linking general principles and global processes to local issues and regulatory frameworks, the course uses case studies to illustrate practical applications. This course will be delivered through a web-based format and is designed for completion online. The eight modules include reading assignments, quizzes in some weeks, written assignments, and discussion activities. Developing an anti-oppression social work practice requires an understanding of diversity and difference, power and privilege, and oppression–as well as understanding one’s self within these systems. In this course, students will engage in courageous conversation as they unpack Social Work’s history, both past and present, moving into an inclusive and anti-oppressive future. The themes of deconstructing systems of oppression, cultural wellness, intersectionality and practice strategies are infused through the course. A wide range of diverse populations will be discussed, reflecting the varied populations impacted by oppression, such as race, ethnicity, gender, sexual orientation, and physical differences. Additionally, students will examine the role, function, and effects of oppression in society as it relates to social and economic justice. Remote sensing & GIS give us new ways to understand changes happening around the world. This course is designed to give learners skills that will enable powerful analyses, to be used widely across disciplines, with an emphasis on natural sciences. We will concentrate on aerial photography and satellite measurements, with some discussion of other remote sensing techniques (gravimetry, radar, lidar, etc). You will learn how to acquire and manipulate data, and how to extract information from imagery. Application of these techniques to environmental monitoring, oceanography, agriculture, resource management, and other disciplines will form the basis of the course. Climate changes. It always has and always will. However, scientific evidence proves that over the past half century, human activities are the primary driver of change in the Earth’s climate system. The course first describes the Earth’s climate system, then explores scientific evidence of past and projected future climate change, the associated climate risks and impacts on our interconnected social and ecological systems on regional and global scales. The course also considers prospects for addressing the climate crisis via sustainable development with a focus on human health and economic development. You will learn problem solving through critical analysis and assessment of climate change indicators, climate risks, and sustainable development options. The purpose of the course is to better understand the complex and evolving nature of climate change and associated impacts, and explore frameworks that can be used to apply this knowledge to climate action at local and regional scales.
